Home Style Lentils
Lentils are a symbol of good luck in Italian folklore. This soup is often prepared for New Years Eve to bring good fortune in the coming year, but you can enjoy this dish year round!
Ingredients
- 10 cups of water
- 1 onion chopped
- 1 celery stalk finely chopped
- 1 carrot chopped
- 1 package of Aurora Lentils 750gr
- 3 tablespoons of Aurora Extra Virgin Olive Oil 750ml
- 1 can of Aurora Diced Tomatoes (Pezzettoni) 398gr
Directions
- In a deep pot add enough water to cover lentils plus 1-2 inches.
- Bring to a boil, change and replace water, bring back to a boil and let simmer on low for 30 minutes.
- Meanwhile, In a seperate skillet, sauté onion in extra virgin olive oil until translucent.
- Then add celery, carrots and diced tomatoes to onions and cook for 10- 15 minutes.
- Add vegetables to pot of cooked lentils and let simmer another 5-10 minutes together.
- Serve with a drizzle of olive oil, alone or with your favourite short cut Amato Pasta.
