Pasta alla Puttanesca
Use spaghetti or your favorite cut of pasta to make this simple classic recipe full of flavour and spice. Pasta alla Puttanesca (prostitute style pasta, ahem) is a spicy Italian dish believed to have emerged between the 50′s and 60′s but the origins of the name are still a bit of a mystery. Ingredients
- 3 tablespoons of Extra Virgin Olive Oil Aurora Extra Virgin Olive Oil 750ml
- 1 medium onion finely chopped
- 2 cloves of garlic crushed
- 1 teaspoon of hot chili flakes
- 4 anchovy filets Allessia Anchovies Fillet 80gr chopped
- 12 black or green olives pitted or not
- 2 tablespoons of Allessia Capers In Salt 100ml
- 1 can of Aurora Diced Tomatoes (Pezzettoni) 398gr
- 1⁄2 bottle of Aurora Tomato Puree 660ml
- 1⁄3 cup of fresh parsley chopped
- 1 package of Amato Spaghetti 500gr
- 1 tablespoon of Aurora Fine Sea Salt 1kg
- Water to boil pasta in
Directions
- In a saucepan lightly saute onion in olive oil until translucent (about 5 minutes)
- Add Garlic, Hot Chili Flakes, Anchovies, Olives and Capers and let saute another 2 minutes
- Add Diced Tomatoes and Tomato Puree. Let simmer on med/low heat for 10 -15 minutes
- Boil water, add Sea Salt and cook pasta as directed on the package less 1 minute.
- Gently toss pasta into sauce over med/low heat for 1-2 minutes, turn off heat, add fresh parsley and serve.
