Risotto Style Lentils

Lentils can be made using the Risotto method. Watch the Risotto with Peas recipideo while keeping in mind a few minor substitutions.
Ingredients
- 2 cups of Dried Lentils Aurora Lentils 750gr
- 1 Onion chopped
- 1 Carrot chopped
- 1 Celery Stalk chopped
- 1 **Bouillon Cube Aurora Herb Bouillon Cube 66gr
- 1 cup of Red Wine
- 4 tablespoons of Extra Virgin Olive Oil Aurora Extra Virgin Olive Oil 750ml
- 5 cups of Water
Directions
- *Soak Lentils for 2 -24 hours in warm water or bring to a boil and let stand until you are ready to use them.
- Rinse soaked Lentils with fresh water and drain.
- Saute Onion in Olive OIl 2-3 minutes.
- Add Carrot and Celery and saute another 2-3 minutes until onions are translucent.
- Add *soaked Lentils to vegetables
- Stir in wine and saute for 2-3 minutes
- Add 2 cups of the water and let simmer for 10 minutes stirring occasionally.
- Add additional 2-3 cups of water and simmer on low for additional 20-30 minutes.
- **Omit Bouillon and add Sea Salt to taste at any time instead.
