Asiya at Chocolate and Chillies (gosh my two favorite things!) makes Spring Green Risotto with peas and asparagus. You can follow her recipe or just add asparagus at the same time as the peas in our Risotto with Peas Recipideo. Its a nice touch if you reserve the asparagus tips. Just cut the tips, blanch and season and set them aside as a garnish.
Isabelle at Crumbblog with her witty writing style has the most unusual combination I have seen. Risotto with Fiddleheads, Fava and Snow Peas. She writes ” ..wading into the crowd of old-timers to pick a bag of [fava] beans is one of my favourite springtime rituals on the Danforth.”
Katie at Little Spatula makes Shrimp Risotto with Sweet Peas and Leeks. Again follow her wonderful recipe or just substitute onions with leeks and add cooked shrimp at the end of Risotto with Peas recipideo.
