Chilled Piquillo Pepper Soup

    • 2 314ml jars allessia piquillo peppers

    • 1/3 cup greek yogurt

    • 2 tablespoons Aurora extra virgin olive oil

    • Pinch Aurora Kosher salt

    • Auroras Crostini, for garnish

    • Fresh dill, for garnish

    • Freshly ground black pepper, to taste

    Serving Ideas: A little can go a long way. Serve as a tiny appetizer to get the flavour party started!

  • Drain the Allessia Piquillo Peppers, then blend with yogurt and salt while slowly streaming in olive oil.

    Chill soup in refrigerator for at lease 2 hours.

    Serve the soup topped with crumbled crostini, fresh dill, and black pepper.
