Grilled Eggplant Sandwich

    • 4 crunchy rustic bread buns

    • 2 large eggplants

    • 1 fresh mozzarella ball, thinly sliced

    • Rodolfi Ortolina

    • Allessia La Bomba

    • Aurora Extra Virgin Olive Oil

    • Aurora Kosher Salt

    • fresh basil leaves

    Serving Ideas: Use a long baguette for the bread and cut it into small pieces for a fun and delicious appetizer!

  • Peel and slice eggplant into 1/4–3/8" rounds. Brush with olive oil, season with salt, and grill 2–3 minutes per side on a well-oiled grill.

    Slice buns in half, drizzle with olive oil, and grill for 2–3 minutes until golden.

    Spread 1 tbsp Ortolina on each bun half, add La Bomba to taste, then top with mozzarella and fresh basil. Grill until cheese melts and bread is extra crunchy.
