Nduja Corn Muffins

Yield: 12 muffins

    • 3/4 cup corn meal

    • 1 1/4 cups whole milk

    • 1 cup all-purpose flour

    • 1/2 tablespoon baking powder

    • 1 teaspoon Aurora Kosher Salt

    • 1/3 cup sugar

    • 1 extra large egg

    • 1/4 cup Aurora Avacado Oil

    • 1 tablespoon freshly chopped rosemary

    • 1 cup Shredded sharp cheaper cheese

    • Tutto Calabria Nduja Spread

    • Aurora Grape Seed Oil

  • Preheat oven to 375°F. Spray muffin pan generously with Aurora grape seed oil.

    In a medium bowl, whisk cornmeal with milk and let sit 5–10 minutes to absorb.

    In another bowl, whisk together flour, baking powder, salt, and sugar.

    Whisk egg, avocado oil, and rosemary into cornmeal mixture, then add to dry ingredients. Mix until just combined.

    Spoon batter into muffin cups 3/4 full, add 1 tsp Nduja to the center, and top with shredded cheese.

    Bake 20–22 minutes until golden and cooked through. Serve warm or at room temperature.
