Roasted Chestnut, Sweet Potato and Apple Salad

    • 100 grams Aurora Roasted Chestnuts

    • 2 large sweet potatoes, peeled and cubed

    • 1 honey crisp apple, cubed

    • 1/4 cup Aurora Extra Virgin Olive Oil

    • 1 tablespoon Dijon mustard

    • 2 tablespoons Ponti Pinot Grigio vinegar or Ponti Apple Cider vinegar

    • 1/4 cup pumpkin seeds

    • Aurora Kosher Sea Salt

    • freshly ground black pepper

    • fresh chives, for garnish

    A super quick, easy and healthy salad great for any gathering!

  • Boil peeled, cubed sweet potatoes in salted water until fork-tender (about 15 minutes). Drain well, then return to the hot pot to cool and dry.

    In a large bowl, whisk mustard, vinegar, oil, salt, and pepper. Add sweet potatoes and apples; toss to coat.

    Transfer to a platter and top with roasted chestnuts, pumpkin seeds, and chives for extra flavor.
