Roasted Chestnut, Sweet Potato and Apple Salad

100 grams Aurora Roasted Chestnuts
2 large sweet potatoes, peeled and cubed
1 honey crisp apple, cubed
1/4 cup Aurora Extra Virgin Olive Oil
1 tablespoon Dijon mustard
2 tablespoons Ponti Pinot Grigio vinegar or Ponti Apple Cider vinegar
1/4 cup pumpkin seeds
Aurora Kosher Sea Salt
freshly ground black pepper
fresh chives, for garnish
A super quick, easy and healthy salad great for any gathering!

Boil peeled, cubed sweet potatoes in salted water until fork-tender (about 15 minutes). Drain well, then return to the hot pot to cool and dry.
In a large bowl, whisk mustard, vinegar, oil, salt, and pepper. Add sweet potatoes and apples; toss to coat.
Transfer to a platter and top with roasted chestnuts, pumpkin seeds, and chives for extra flavor.
